This cake is rich in flavor, but airy in texture. While our Vegan Vanilla Cake recipe, may be amazing, this recipe meets all those great expectations too! This cake is full of love, using no animal products:)

*Ingredients*

2 cups(240g) oat flour*
1 cup (80g) cacao powder
3/4 cup (90g) tapioca starch
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cup (360g) almond milk
1/2 cup (130g) almond butter
3/4 cup (105g) coconut sugar
1 1/2 cup (360g) applesauce
1 tbsp apple cider vinegar
1 tsp vanilla extract
1 tsp coffee extract (optional)
Frosting
1 1/2 cup (180g) raw cashews soaked overnight
1/4 cup (80g) maple syrup
1/4 cup (20g) cacao powder
1/4 cup(50g) coconut oil***

Soak the cashews overnight. Combine all ingredients in blender and bake at 350 for 30-35 minutes. Later blend the frosting until no lumps and chill it.

There is hope for all recipes. Today recipes can be altered easily to compensate for unwanted ingredients. So here you have it! Simply look for the substitution when you find yourself in a baking or cooking dilemma!

Non-Dairy🥚🥛🐮

Egg🥚: used for binding, moist, puff, flavor, and appearance

  • Flax seed “egg” – 1 tbs flax+ 3 tbs water (set)
  • Chia seed “egg”- 1 tbs chia + 3 tbs water
  • Applesauce- 1/4 cup
  • Banana- 1/4 cup
  • Silken Tofu- 1/4 cup puréed
  • Baking soda- 1 tbs (mainly for fluff, not binding)
  • Nut butter- 3 tbs
  • Aquafaba- 3 tbs
  • Yogurt- 1/4 cup

Milk🥛:

  • Soy milk- (Creamier)
  • Cashew milk
  • Almond milk
  • Oat milk
  • Lactaid- (still from cows, but dairy free)
  • Water- obvs in baking situations
  • Coconut Milk

Butter:

  • Coconut oil
  • Olive oil
  • Avocado oil
  • Vegan store bought butter- Earth Balance, Miyokos, Melt
  • Coconut butter

Gluten-Free

Flour🌾:

  • Almond flour- 1 cup to 1 cup (1:1)
  • Buckwheat flour
  • Coconut flour
  • Oat flour- 1 cup to 3/4 cup
  • Chickpea flour
  • Quinoa flour
  • Gluten-free (store bought) flour

Meat (Protein)

Meat 🐮 🐷🐔:

  • Poultry- tempeh, tofu
  • Ground beef- Crumbled tofu
  • Pork- shredded jackfruit
  • Fish- salmon: cauliflower

Protein:

  • Beans
  • Lentils
  • Nut butters
  • Tofu
  • Tempeh
  • Avocados
  • Nuts
  • Egg- for dairy free people
  • Quinoa
  • Chickpeas

Note to reader:

Of course all of these examples are on a very wide range and not for everyone. While a lot of the options are great as habitual substitutions, many are also quick, easy, spur of the moment options. For instance a lot of the meat/protein substitutions, might not be substantial enough for certain people such as high-intensity athletes. As a runner, I eat high-protein, earning it through eating meat; BUT I do like to frequently have vegetarian meals and mix-it-up with my protein. Maybe one day I will eat a solely plant-based or vegetarian diet, but for now it isn’t suitable for me. That is why it’s so great to have options! This list can be very helpful for people trying to switch something in their diet or try something new!

Vegan Cinnamon Rolls!💫🌟✨🌱

Sweet and Sugary. Gooey. Melty. These Cinnabons meet all those expectations. This recipe is a healthier take on cinnamon rolls, but just as delicious! AND SO EASY TO MAKE!

Bake it up

i n g r e d i e n t s

dough
2 – 2 ½ cups whole wheat flour
2 ¼ tsp dry yeast
2 tsp baking powder
½ tsp salt
¾ cup warm plant-based milk
½ tbsp vegan unsalted butter, melted (earth balance)
1 tbsp (12g) coconut sugar/ granulated sugar

filling
5 tbsp coconut sugar or granulated sugar
2 tsp ground cinnamon
½ tbsp vegan unsalted butter, melted
Directions-
Preheat oven to 350 F. For the dough mix dry ingredients in separate bowl and wet ingredients in another. Once both are separately combined, mix wet in slowly into dry till soft dough forms. Knead dough for 3-5 minutes on floured surface and roll out. Let sit while preparing filling. To make filling still together all Ingredients till combined thoroughly. Set aside. Brush butter onto rolled out rectangle of dough. Sprinkle the sugar mixture onto dough evenly. Rolled the rectangle of dough into log. Finally cut the dough into about 2” width and place in 9” round pan. Bake for 17-20 mins or until golden brown. After baking glaze is optional (glaze- powdered sugar+ milk or water) ENJOY! 🙂

Key Lime Pie Bowl🥧 ❇️

This recipe might be one of my all time favorites! The funniest part is that I’m not even that big of a key lime pie! This smoothie bowl has the perfect tarteness and the “crust” adds a whole other layer of texture. This bowl will not disappoint.

Ingredients-

Smoothie blend- (all fruit frozen)

1/4 cup mango

A few pineapple chunks

1/2 cup soy milk

1/4 cup spinach

1/4 avocado

1/2 lime (juice and 1/4 of the lime rind)

Oats-

3/4 cups oats

1/2 cup soy milk

Directions-

At night prepare oats. Mix oats and milk and put in fridge overnight. In morning make smoothie base. Blend together frozen fruit and milk till smooth. Pour smoothie onto bed of oats and top with coconut and lime slices! ENJOY!💚💚💚

Nice Cream. We all love it. But nice cream is either a pass or fail. It’s either amazing, or not good at all. This recipe offers you the creamiest texture and smoothest taste!

Just combine frozen banana, a little bit of almond milk, and a few frozen strawberries for this colorful and amazing snack or desert!

Spiced Apple Breakfast Cakes🥞🍎

These dairy- free pancakes are to die for. The caramelized apple and golden brown pancakes are perfect for the cool sun-kissed mornings. These pancakes and a warm cup of coffee are the perfect early morning treat.

1 banana 
1/4 cup oat flour
1/2 tbsp baking powder

I also baked some apple slices in brown sugar and cinnamon for around 15 minutes and put those on top for a winter spin on this recipe. 🙂 Enjoy!!!❤️

Berry Blues Bowl ❁🍓💙

This gorgeous bowl was delish! The berry blend and almond butter topping is perfect together! The floral touch is my favorite part. Edible flowers make everything better!

Nice Cream! Nice Cream! We all scream for Nice Cream! This nice cream is a sweet-tooth lovers dream- YET a healthier version! With peanut butter sinuous swirls and melty chocolate chips!

Blend 2 bananas with a little bit of almond milk for a smooth texture. Once done, top with peanut butter, cinnamon, and chocolate chips! That’s it! 
Pro tips:
You can also add chocolate or peanut butter protein powder to the nice cream for your own delicious take on the recipe! Enjoy!:)

Topped with My FAV granola- bear natural peanut butter granola, some chia seeds and some sliced banana along with a little drizzle of honey on top:)
