I n g r e d i e n t s…

Cakes
-2 1/4 cups flour
-1 cup sugar -1 1/2 tsp baking powder
-1/2 tsp baking soda
-1/2 teaspoon salt -1 1/2 cups soy milk
-1/2 cup brown sugar
-1/2 cup melted coconut oil
-2 tsp vanilla extract
Glaze
-1/2cup powdered sugar
-1/4 cup water or milk
*Directions*
Preheat oven to 350 degrees F. Combine all ingredients in a large mixing bowl with whisk. Line cupcake pan. Use ice cream scoop or spoon and fill liners 1/4 of the way. Bake for 20 minutes. Put glaze on cupcakes when hot and add sprinkles if desired🌈⭐️EnJoY!!!

This recipe comes from one of my favorite cookbooks. If I’m being honest, I don’t usually use my cookbooks because I’m not good at following the rules and usually end up trying to improvise, which ends up ruining the recipe. But I had a change of heart with this cookbook. Kathryne Taylor gives recipes that allow people of all different diets to enjoy them. I hope you all enjoy too!

Ingredients

This recipe if from one of my favorite cookbooks, “Love Real Food!” It gives tons of healthy delicious recipes, as well as substitutions for those with constrictions! This is the recipe for Peanut Butter chocolate chip cookies<3
-2 cups coconut sugar
-1 jar of peanut butter
-2 eggs
-vanilla
-1/4 Teaspoon salt
-dairy free chocolate chips
This Batter was a little runny, so I put it in the fridge for around 10 minutes. I also cut the recipe in half and it worked just as well! Enjoy!:)))

Chipotle Style Sweet Potato🌶🌽🥔🥑

This recipe is one of my favorites! I love sweet potatoes, BUT I find that a lot of the recipes are getting repetitive. So here you have it! The Vegan style burrito bowl!

INGREDIENTS-
1 large sweet potato
Chicken (tofu or veggies if vegetarian or vegan)
2 baby peppers chopped 
1/8 cup yellow corn
1/4 avocado
Top with cilantro- optional 
Directions~
Poke sweet potato with fork and place in microwave for 11 minutes. Cut veggie and chicken and stuff potato. Sprinkle salt and pepper on top and garnish with cilantro. ENJOY!!!🌱🥔🥬🌶🌽🥑🍠

A bowl full of love, greens, and plant-based protein! Tofu is a favorite of mine, and this recipe includes my go to tofu recipe! And isn’t it pretty! Eat the Rainbow all the way! 🌈

INGREDIENTS

Tofu:
So easy and SO delicious! Bake in oven at 400 until lightly browned. Make sauce; 1/4 cup soy sauce, 1 tablespoon peanut butter, 1 table spoon white vinegar. Combine with tofu after baked!
Vegetables:
Boil them until soft. For me, I used broccoli, cauliflower, and carrots. You can you add whatever you want! Before eating I also recommend adding spinach:) Enjoy!

PB + J Swirl Bowl🍇🥜

The Peanut butter and Jelly sandwich is a classic. So why not make it into a smoothie bowl? This bowl was one of my favorite tastes. The creamy banana and peanut butter & berry compote were the perfect combo!

Ingredients

1/2 cup soy milk
Small handful strawberries (frozen)
1/2 frozen banana 
1/4 avocado
A few chunks of ice
Topping-
Peanut butter to liking- I used @crazyrichardspb
Jam- stick fresh blueberries in microwave for 30 seconds or on stove for 15-30 seconds and mash with fork
Directions-
Blend all smoothie ingredients together. Pour into desired bowl (@coconutbowls) and top with “jam/berry sauce”(directions on how to make above). ENJOY!🥜🍇🍓🍌

Honestly all of us did not have the highest hopes when creating this recipe. Carrot cake is a tricky recipe, but after cutting in and taking the first bite, our hopes were surpassed! The cake was moist, sweet, and airy. This recipes is an exemplary of how to make veganism taste good:)

*Ingredients*

3 flax eggs
1/3 cup melted coconut oil* (or sub other neutral oil)
1/4 cup maple syrup
1 cup unsweetened applesauce
1/2 cup organic brown sugar* (or sub coconut sugar)
1/4 cup cane sugar* (or sub coconut sugar)
3/4 tsp sea salt
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp ground cinnamon
3/4 -1 cup plant based milk
1 1 /2 cups loosely packed grated carrot
3 cups flour 
Frosting-
1 cup coconut cream- we used raw coconut meat and blended it with coconut water
1 tbs vanilla
3/4 cups powdered sugar
Directions-
Preheat oven to 350 degrees F. Combine all ingredients in one bowl. Grease pans. Pour cake batter into 2-3 pans. Bake until golden brown (our’s baked for about 20 minutes). For glaze whisk coconut cream until smooth and thick. Add vanilla and sugar slowly to throughly combine. Layer your cake with glaze between. ENJOY!

This was made for my cousin in town and she said as quoted, “This is the best smoothie bowl I’ve ever had!” Turns out this was her very first smoothie bowl she had ever had. Haha. This BOWWWWWL. The flavor, the color, the texture. Everything was perfect. And of course, the color. Pink is definitely one of my favorite colors. There is something about it thats makes me so happy! The Green Coconut Smoothie Bowl

Not only was this smoothie bowl delicious, but so fun to make. Well… I take that back. While, cracking open a fresh coconut seems fun and quirky, it is NOT EASY. It nearly took us an hour to crack it! But was it worth it? Yes!
